The interiors of this Amsterdam restaurant, on the ground floor of the upscale Hotel De L’Europe, complement chef Bas van Kranen’s conscious fine-dining cooking. From the custom oak-framed entrance and gently undulating ceiling to the soft palette, the backdrop feels earthy and natural. There are only 11 tables, with views of the Amstel River. The Kitchen Table offers a front row seat to the kitchen and a team that has seen the restaurant awarded two Michelin stars. The set menu – choose from omnivore or herbivore – changes across three seasons to maximise hyper-regional ingredients at their peak. One thing you can always be sure of are organic vegetables, wild-foraged herbs, sustainable fish and responsibly raised animals. The kitchen is also dairy-free, so no cheese, butter or cream. The attention to detail is flawless: one of the signature dishes includes no less than 25 herbs, vegetables and flowers, some cooked, others raw or pickled (fermentation is a big deal here). The wine list is one of the most extensive in The Netherlands.
