With its fertile soil and comparatively balmy climate, the Limburg region could be nicknamed ‘Holland’s deli counter’. Not only does it produce wonderfully tender asparagus, it is also home to the country’s only vineyards. Unsurprisingly there are a number of standout restaurants in the area but if you’re after quality ingredients and strong flavours presented in surprising tasting menus, Brut172 is the place. Hans van Wolde is one of Holland’s most celebrated chefs and his years of experience are demonstrated in the exceptional sauces and condiments that make dishes such as foie gras with watermelon and raspberry sing. The setting, a restored farmhouse in the medieval village of Reijmerstok, is just as exceptional. Whether seated in the drawing room or kitchen, expect lashings of raw wood and steel and a soft colour palate that brings to mind misty morning walks through the hills.
