Its tasting menu explores the country’s palate through dishes like carabineros (deep-sea prawns) with bacalhau (Portuguese salted cod), artichoke and chouriço oil, and triumphantly concludes on a distinctly Dutch note via a range of super-sweet speculoos cookies, adored the world over.
