With just 16 seats, this tiny restaurant is a love letter to Dutch seasonal ingredients. Four times a year the tasting menu rotates, spotlighting hyper-local growers, foragers, fisherfolk and farmers through an impressive parade that begins with playful snacks before building up to mains and finishing with delicately sweet mignardises. Each one of the considered presentations is simple and confident – fitting for a restaurant that lets the quality of its produce do the talking – while a carefully assembled French-leaning wine list gives equal billing to both rare vintage Champagne and trendier pours from the likes of Jura. The setting is austere, with exposed brick, low lighting and a simple wood circle-around counter space for diners, which ensures attention stays right where it belongs: on the food.
