Eggen’s cooking is rooted in top-draw seasonal produce and classic techniques but often comes with a modern twist thanks to unexpected flavour combinations inspired by his love of travel. The eponymous green lantern is in fact a working windmill where the restaurant grinds its own flour for innovative breads ranging from straight up sourdough to croissants baked in miniature loaf pans and served with salty soups. If the weather allows, it’s definitely worth booking a table on the terrace, which has views of the veggie garden and windmill.
