Celebrated for its cool-climate organic wines, Greystone Wines is one of the shining stars of the North Canterbury region on New Zealand's South Island. Located in the Waipara Valley, it produces everything from terroir-driven pinot noirs to steely rieslings, but is best known for its chardonnay whose flavours run the gamut from oyster shell and white peach to toasted hazelnut. The wines are best enjoyed at its restaurant, run by Cameron Woodhouse. Daring diners can choose the 'Trust the Chef' option – a four-course menu of seasonal dishes paired with Greystone wines. Sitting on a spur in a paddock high above the winery is the Greystone PurePod, a glass-walled eco-cabin with a private deck and a telescope for stargazing. Offering jaw-dropping views of the Waipara Valley by day, and pin-sharp stargazing by night, it allows you to reconnect with nature from the comfort of the cabin.
