After 15 years honing their skills on Granada’s restaurant scene, Damien Hopkins and Xiomara Díaz launched NM Culinary to shine a light on forgotten local ingredients as part of their respectful farm-to-table dining. Called NM as an abbreviation of 'numu', which means 'sun' in the Chorotega indigenous language, the restaurant follows the rhythms of nature and a respect for locality: fish from nearby fisherman, chicken raised at NM and long lost herbs, vegetables and fruit sourced from small farms or homegrown. Pasta, breads and ice creams are all homemade and simple signature dishes such as local grilled sardines with citrus, garlic and greens and slowly cooked gallina de patio chicken with a refreshing naranja-chocoya-infused malanga purée really let Nicagaruan produce shine. For a laidback aperitif, head over on weekdays between 4pm and 6pm to enjoy dishes alongside cocktails crafted with seasonal local fruit such as nancite, calala and rambutan.
