Don't let the relaxed, neighbourhood bistro setting fool you. Clon's kitchen is deeply committed to sourcing some of Peru's rarest ingredients. This the third project from Venezuelan chef Juan Luis Martínez, who also runs Mérito next door and Demo just up the street. In the bohemian quarter of Barranco, there's no shortage of dining wins, but Clon sets itself apart through deft use of local produce in elevated Venezuelan recipes. The menu changes with the seasons and Martínez's ongoing exploration of regional producers, with hero dishes such as pisco clams with tiger's milk and grilled conchitas glazed with cocoa honey and coconut cream. Take a seat at the bar for a front-row view of chefs grilling scallops over open flame, alongside a glass from the considered list of Peruvian wines.
