Found within the striking Palacio Nazarenas, A Belmond Hotel, Mauka honours Peru's farmers, while also providing a lesson in Andean landscapes – from the mountains and the Amazon rainforest to the lagoons, forests and valleys. Cusquenian flavours are bountiful, as well as bing rooted in diversity and celebrated chef Pía León looks to tradition and the past in her more forward-thinking interpretations.There’s an element of preservation, and celebration, of the way Peruvians eat – in one dish León utilises the humble Alpaca in a crudo dish that’s topped with lemon verbena and chuño (a typical preserved potato) while in another plate, she showcases grains from the Andean plateau. The drinks menu focuses on the locality too, with some cocktails using aromatic Sacred Valley herbs. It’s a visual beauty – both plating on pretty coloured ceramics and in the interiors: smooth and natural textures are highlighted through lenga wood and volcanic stone finishes.
