Set on his family’s nine-hectare countryside estate, Carlo Calma’s take on a Spanish asador is thrillingly unexpected. Calma, a celebrated architect, is behind its distinctive design: an origami-like pavilion inspired by a neighbouring volcano, with cantilevered roofs, recycled plastic floors and sculptural steel canopies. As with any asador, the focus is on grilling and roasting over wood, so the six- and ten-course tasting menus here have a lick of fire and smoke, and the kitchen revolves around a four-tonne oven (wood-fired and Spanish-made, of course). The team sends out superlative plates, from slow-roasted lamb and Segovia suckling pig to sweet, red-shelled carabinero prawns. Some ingredients, like the heritage tomatoes, are grown on the estate’s own farm, while others – such as those plancha-grilled prawns – are imported from Spain's best producers. It’s an approach that’s won the restaurant huge acclaim, being one of just nine Michelin-starred restaurants in the Philippines.
