A cave, or a womb – however you describe the warm, embracing environs of this super-intimate restaurant, it feels like a secret retreat, far from the rush of rambling Manila. The same kind of restorative care applies to the dishes, presented as a ‘bahala na’ tasting menu, described by the restaurant less as a chef’s dictatorial procession and more as a passage of trust, where a team curates perfectly seasonal ingredients from the Philippines and further afield. Saying that, chicken, fish and pork all feature predominantly, with few accommodations made for vegan or vegetarian diners. Given the intimate atmosphere of counter-only seats, punctuality for one of the two daily sittings is key. Recent menu highlights have included chicken inihaw, a smoky-sweet grill basted in soy sauce.
