To dine at Antonio’s is to enter a slower, more gracious time. For a start it is 1.5 hours’ drive from Manila in the jungle-clad, lakeside holiday town of Tagaytay, so a meal here is probably a full day’s commitment. The restaurant itself is in a colonial-era mansion set in dreamy gardens. We’re talking candelabras suspended from coconut trees, arched corridors leading to ferny walkways and apparently endless seating areas, mostly with original tiled flooring. Arrive in time for a cocktail hour before tucking into mouth-watering French-favourites such as escargot, succulent steaks dry-aged for 15 days and duck confit with gooey gratin. With a setting like this, Tony Boy Escalante doesn’t need to reinvent the wheel and he doesn’t try to. He just keeps that wheel liberally greased with butter and champagne and boy does it turn well.
