Every detail’s crafted at this intimate, kappo-style address, from the chopsticks (made from smoked bamboo) to the sleek acacia-wood counter, where chef Bruce Ricketts serves his sushi omakase menu. He’s not one to play it by the book, so expect a few surprises, with dishes that take Japanese techniques into new and thrilling directions. There could be a dainty oyster croustade, or a sesame-tuille sandwich of foie gras; a Japanese sardine on homemade milk bread, or an octopus-filled taro puff. Filipino flavours and produce are woven throughout the menus, including some pristine seafood from Basilan, showcased in the nigiri, or the calamansi zest that Ricketts likes to pair with aged Hokkaido scallops. You’ll need to sign up for the full menu to score a seat at the counter, but there’s also a shorter menu, served at the handful of tables (it's equally creative and delicious, but doesn't include any sushi).
