Cliffside boutique hotel and restaurant Villa Joya – opened in 1982 – basks in the southern Portuguese sunshine near the town of Albufeira. The dining room extends to an open-air terrace overlooking the sea: think crisp tablecloths, wicker furniture and low-key, easy-listening music. French-trained Dieter Koschina adheres to Slow Food principles to create refined, seafood-rich à la carte (lunchtime only) and tasting menus featuring the likes of razor clam with yuzu and crayfish with kohlrabi.
