Cliffside boutique hotel and restaurant Villa Joya – opened in 1982 – basks in the southern Portuguese sunshine near the town of Albufeira. The dining room extends to an open-air terrace overlooking the sea, bringing a low-key, easy-breezy ambience. French-trained Dieter Koschina adheres to Slow Food principles to create refined, seafood-rich tasting menus (there is a la carte on occasion at lunchtime only, but with limited availability). It changes every day but you might be feasting on the likes of razor clam with yuzu; crayfish with kohlrabi; John Dory with saffron and onion; and kumquat with chocolate and coffee. These may sound like simple flavour combinations, but the layers of flavour are award-winning. The well-stocked wine cellar is an added bonus, and the restaurant recommends you start dinner with a cocktail tailored to your menu, inviting you to the bar 30 minutes before the table reservation.
