Originally a testing space for culinary ideas and techniques, chef Vasco Coelho Santos soon opened his ‘laboratory’ to the public. It’s a workshop in central Porto with Japanese style: a marble topped central counter provides bar stool seating for 8 testers overlooking the kitchen while a further two tables provide seating for just eight more. Vasco and his young team present a tasting menu of around ten courses or ‘moments’ – each one small but exquisitely presented. The food itself owes its inspiration from around the world but with Portuguese accents. Expect plenty of fish including Portuguese oyster, lobster ‘grelos’ and octopus. Ever inventive, Vasco creates new tastes and combinations every week. Just hope that his churro topped with rosemary-soaked caviar and white chocolate is still on the menu when you visit.
