Singapore’s Somma is a lesson in classic Pugliese, ingredient-led cooking, set within an earthy, pared back space brought to life with natural textures, warm clay tones and diffused lighting. Timber tabletops, stone counters and delicate Mediterranean motifs give the restaurant a grounded feel that lets the food really shine. The menu moves between beautifully tended plates such as charcoal-kissed pink radicchio with grape tamari, Mare Piccolo mussels, slipper lobster with spaghettone, mountain lamb with pumpkin ceviche and a delicately risen cheese soufflé.
