Its location in the basement of The Forum Mall and patterned carpet that might bring to mind your grandma’s curtains reflect the fact that this family-run restaurant has barely changed since 1998. However, a crowd of mostly Asian businesspeople and an award-winning 200-strong wine list tell a far more cosmopolitan tale. Menus revolve around enormous tanks of live seafood that diners are invited to pick their own dinner from, but the must-try dish is the whole steamed fish of the day. Service in Singapore often gets a bad rep for being impersonal; not so here, where Mr Ho Kin Fung – brother of Ho Kin Yan, who mans the stoves – is so charismatic that diners often end up offering him a glass of wine as he works. Go with a group so you can order banquet-style, which is traditional for a Cantonese restaurant and enables you to try more things.
