Mallow is the passion project of Noma's former Head Forager Christina Rasmussen. Set within Singapore's Intercontinental Hotel, this modern but welcoming space is arranged around a striking central bar, overlooking the hotel grounds. Not your average cocktail bar, whilst you can call in for a drink or two, here the main event is a six-course plant-based tasting menu where each of the courses is paired with a different drink. For example a dessert of chocolate olive oil, soursop granita and smoked cocoa nibs has been matched with the Orange Julius which mixes Pasilla chilli spirit with egg yolk, orange and apricot. The cocktail programme has been overseen by Sasha Wijidessa whose previous experience includes time at Singapore's Operation Dagger, as well as a stint working in Copenhagen as a spirits rep.
