White-painted walls, a blonde-wooden bar and location on a side street in the residential neighbourhood of Serangoon make Mustard Seed feel like a haven of calm compared to the frenzy of Downtown. The booking system is somewhat less relaxing. Just 13 seats are released at 10am on the first of every month and generally snapped up within the hour, a testament to the pure finesse of Gan Ming Kiat’s multi-course tasting menus. Flavours are firmly rooted in Singapore but the technique and presentation is inspired by Japanese kaiseki cuisine, a format originally born at the wildly successful supper club he ran from his parent’s flat. The restaurant version is equally intimate – and exciting.
