Feature walls covered in plants and silver cow heads hint at this restaurant’s unique Tokyo Italian dining experience: although the format may be very different, both Japanese and Italian cuisines are in thrall to raw ingredients. Tokyo-born chef-owner Seita Nakahara explores this similarity through multi-course omakase menus featuring Japanese ingredients prepared with Italian techniques. Omakase literally translates as ‘leave it to the chef’ and, when plates such as sea urchin risotto and sea bream carpaccio start rolling out of the kitchen, you’ll be delighted that you did. Menus change every day but the restaurant also keeps notes on returning customers to ensure they are never served the same dish twice (unless they specially request it).
