Everything about chef-patron Julien Royer’s Claudine is unapologetic in its delivery of a timeless French dining experience. From its à la carte menu headlined with nostalgic vintage typeface, through to its brassiere-styled dining room set inside a converted chapel, dinner at Claudine is a full-frontal French experience. As a result, its menus are populated with all the transportive hallmark dishes that earned the country its reputation as a gastronomic giant of the globe, often created using ingredients native to east Asia. Think carpaccio of Japanese miyabi madai (sea bream), decorated with fresh cucumber dressing with voatsiperifery pepper and a zingy citrus kick. Other courses, such as its vol-au-vent of sweetbreads with morels and cockscomb, or its steak tartare à la Parisienne, opt for wholly faithful and unchanged deliveries. As to be expected of a French-inflected restaurant, there’s also a serious pairing of western European vintages on offer.
