The 10-course omakase menu comes in at $400 before drinks, but the same locals walk away in rapture. Tetsuya Wakuda – winner of Asia’s 50 Best Lifetime Achievement Award in 2015 – presents seasonal produce from different regions in Japan, such as Hokkaido, Okinawa and Toyoma. Signature dishes such as marinated Botan shrimp with sea urchin and Oscietra caviar, and Japanese Ohmi wagyu roll from Shiga prefecture are served on sleek countertops. At The Bar at Waku Ghin, the talented bartending team showcases Japanese-style mixology through a marriage of Japanese technique with prized spirits. It also offers an extensive list of over 100 cocktails, rare sakes and whiskies with an expanded a bar menu.
