Tucked away in Slovenia’s wine-rich Štajerska region, Opok27 is less a restaurant and more a gastronomic manifesto. Inside, it's all clean lines and muted colours, allowing the food – and the views of the stunning Upper Štajerska hills – to shine. Ingredients are uncompromisingly local and often foraged, with dishes showing off chef Gregor Leber-Vračko's flair, such as his take on vitello tonnato (using pork instead of veal and smoked trout sauce instead of tuna), freshwater shrimp with house-made kimchi and cauliflower, and aged cheese paired with punchy natural wines. Inspired by Leber-Vračko's childhood memories, signature dishes change seasonally but always go beyond what’s expected, with no two meals ever the same.
