Many make a beeline for The LivingRoom, a restaurant at Summerhill Guest Estate in the suburb of Cowies Hill, just outside Durban. Sustainability and seasonality are the foundations of the set multi-course menu, which is always in flux as chef Johannes Richter (who owns and runs the guesthouse with his wife Johanna and mother Christine) sources ingredients that are hyper-local and endemic. Wastage is not an option here: the kitchen works with the whole plant or animal where possible, using fermentation and preservation practices in order to do so. The wine flight covers some of South Africa‘s smaller wine makers and producers who share the same values as the family.
