You’ll wonder if you’ve accidentally stumbled into a mad scientist’s lab when you enter this innovative Korean spot; medical-style jars line the otherwise stark walls and bartenders are outfitted in crisp white lab jackets. You’ll find few recognisable bottles to select from on the back bar, instead a raft of housemade infusions, tinctures, powders and bitters, each one a building block of flavour on offer in Courduroy’s very creative drinking proposition. Concoctions are interpretive, Korean and seasonal, with examples such as Halmae Bingsu – inspired by Busan’s summery shaved ice dessert – featuring red bean, soy milk and soybean powder, and whiskey. For those familiar with Korean flavour profiles it’ll be a nostalgic and joyful experience, and for those new, a delicious introduction to all flavours Hanguk.
