In a Maca de Castro, the eponymous chef has created a love letter to Mallorcan gastronomy. And it’s inscribed on excellent-quality stock. Born into an epicurean family, an affinity to local produce is in her blood. After earning her stripes under the likes of Juan Mari Arzak and Andoni Luis Aduriz in San Sebastián, she returned home to create what she consider her take on ‘Free Mallorcan Cooking’. Backed by a little black book of island fishermen, farmers and producers, her menu here takes a research and development approach to local fare. It plays out in a refined dining room in a villa a couple of streets back from Aldúcia’s bay in the island’s north. Telling a tale of terroir in each bite, elegant plates might include Menorcan mussels, salt-baked skate with sea fennel hollandaise, bone marrow-laced grilled aubergine with tarragon and soft peanuts, a crisp ‘flower’ of potato cooked in almond butter with iconic sobrasada and pine needle ice cream with pine seed horchata.
