Victor Arguinzoniz is an undisputed king of the grill; a creator of simple Spanish barbecue dishes, all cooked on adjustable-heat grills built by the chef himself. Look out for crunchy corn with sea urchin, salted anchovy on toast and giant Palamós prawns. But the undisputed highlight of the tasting menu is the mammoth slab of txuleta, sourced from retired milk cows, which gives the dry-aged beef a deep umami flavour. All to be enjoyed in the staunchly unpretentious dining room. The location is also hard to beat at this World’s 50 Best regular, that broke into the top five in 2019, nestled as it is deep in the Atxondo valley, just an hour's drive outside of Bilbao.
