Born in Toyota, Japan, and raised by a sushi master father, chef Kideki Matsuhisa moved to Spain in 1997, where he developed a great love for Mediterranean ingredients. Having opened his first restaurant, Shunka (“seasonal aroma”), in 2001, he decided to go big with his next venture, the 2009-launched Koy Shunka (“intense seasonal aroma”). A spectacular destination restaurant with an open kitchen surrounded by a gleaming cedarwood bar, it embodies the same commitment to quality, creativity and presentation that can be seen in Matsuhisa’s contemporary Japanese-Spanish cuisine. Two tasting menus can be enjoyed in the dining room or at the bar overlooking the chefs in action but, either way, diners can expect inventive, artfully presented dishes that showcase the finest ingredients, from caviar to squid. If you opt for the smaller of the two menus, it’s worth going for the Wagyu add-on option – the beef takes on new dimensions under Matushisa’s exacting attention.
