Science and art combine in chef Josean Alija's meticulous dishes at Nerua, a cool, white shrine to cutting-edge Spanish gastronomy within Bilbao's iconic Guggenheim Museum. Set menus change with the seasons but look out for baby squid lacquered with sweet onion, the signature foie gras with candied carrot and the stewed abalone and octopus to experience Alija's playful brilliance in all its glory.
