Set within its own boutique hotel in the old cobbled town of Cáceres, Atrio is the platform for Juan Antonio 'Tono' Pérez's consistently top-notch cuisine and a wine list curated by fellow owner José Polo. Combining European techniques with local ingredients, Pérez interprets traditional into modern throughout the many-course tasting menu. Iberian pork features prominently, elevated to a whole new level – from the 'cheese and ham' with matcha tea cake and quince and the crispy pork ear served with alioli to salt-cured pork jowl, slow-cooked for 72 hours before being crowned with caviar. Even some of the desserts get a sprinkling of the porcine (Iberian chocolate, coffee ice cream and aged ham). The restaurant's pride and joy is the wine cellar, where amongst the 40,000 bottles you'll find Petrus, Lafite-Rothschild, Margaux and Châteaux d'Yquem, including a bottle from 1806.
