Part restaurant, part cultural project, Noor explores the cuisine of Al-Andalus (or medieval Muslim Spain), which has had a major impact on modern Andalusian gastronomy. Through three tasting menus of different lengths, chef Paco Morales presents dishes packed with Moorish influences, such as oysters with kalamata juice and lamb gel or spinach with goat’s cheese and asparagus. Morales travelled the world, working at Mugaritz and five-time World’s Best Restaurant El Bulli, before returning to his hometown of Córdoba to open Noor in 2016. Noor opens during three specific seasons.
