Part restaurant, part cultural project, Noor explores the cuisine of Al-Andalus (or medieval Muslim Spain), which has had a major impact on modern Andalusian gastronomy. Across tasting menus ranging from 11 to 19 courses, dishes are packed with Moorish influences. Black olive toast comes with licorice, venison loin and anchovy mayonnaise; smoked duck is cured, roasted and then served with toasted cherries; almond miso is topped with caviar; and Malaga raisins adorn 25-year-old brandy ice cream and 70 per cent chocolate ice cream. Food here is not for the faint-hearted: Morales' inspiration comes from his travels around the world, working at fine-dining icon Mugaritz and five-time The World's Best Restaurant El Bulli, before returning to his hometown of Córdoba to open Noor in 2016.
