Martín Berasategui is part of Basque culinary royalty. He was born in San Sebastián and from the age of 15 to the age of 27, spent all his free time in French kitchens learning from the greats. His restaurants have so far won a staggering eleven Michelin stars. His eponymous venue has earned its three stars with modern twists on classic Basque dishes put together with the flair of a true artist. Highlights of the a la carte menu might include stuffed Iberian pig's trotters with braised endives, quince and crispy black pudding; mille-feuille of smoked eel, foie gras, spring onions and green apple; and oyster with olive juice, wasabi emulsion and sea lettuce; and suckling lamb cutlet with pickled kohlrabi and truffle sauce. Or put yourself in Berasategui's capable hands and go for the tasting menu (both options are priced the same, which is rare in the world of restaurants). Either way, you won't be disappointed.
