The ever-changing cocktail list at Sala de Personal in Palma de Mallorca is compelling, but for the full experience, hand over control to the bartender, omakase-style. As the menu explains, the Japanese term omakase means “I leave it in your hands”, and here that means four drinks and four bites, including dessert, chosen by the bartender. You might get Cacio e Papaia, a cocktail made with rum, papaya, orange zest and dill with a burrata foam, or the P-pinot Grillé, which combines gin, sherry, roasted cucumber and toasted sesame. These are accompanied by seasonal dishes, like local tomato with parsley oil and capers. Bathed in red light, with plenty of neon, the diminutive Sala de Personal is sister bar to gin-specialist Ginbo above, and nearby Chapeau 1987, both exceptional drinking destinations in their own right.
