A historical architectural dreamscape seems the apt setting for this bastion of fine dining. Though don’t let the aristocratic confines of the 18th-century building trick you, this is a modern experience, indeed one of the country's best. Chef Jesús Sánchez Sáinz is at the top of his game. But he’s on a constant mission: to harness complex flavour complex flavour sustainably, in an haute cuisine setting. That’s not to say he takes things too seriously, though – the kitchen team don flat caps throughout service. At the table, it's a thoroughly Spanish affair, with due attention given to the host region. Channelling flavours of Spain’s gastronomic past and present, revering and reimagining both in equal measure, it’s an artistic journey that rolls from tapa of Cantabrian anchovies with pasiega butter, to a high-end take on the chef’s grandfather’s ‘omelette’, all the way to local pigeon stew with cacao and Bay of Biscay black monkfish in embers.
