One example is the bar’s use of toddy tapping, which involves climbing the palm trees on site to harvest coconut sap by hand. That reliance on nature runs through everything: flavours shift with sun, soil, wind and rain, no two pours are identical. The namesake Raa, a fermented coconut toddy, anchors the cocktail list. Try it in the umami-packed Sea Almond Toddy, which builds on the rich coconut-sap foundation with spiced arrack and tiki bitters. The kitchen runs the same ethos of honouring local terroir and technique. Inland lagoons yield jumbo prawns seasoned with coconut milk curry: let it steep in traditional red rice served in a coconut shell for maximum authenticity.
