Set within the historic, Unesco-listed Galle Fort Hotel, Ropewalk is as steeped in heritage as its surroundings. Claimed to be the world's first arrack-specialty bar, it celebrates Sri Lanka's indigenous spirit throughout its cocktail menu: Good Things Come to Those Who Wait pairs arrack with a Lion Stout reduction and balsamic shrub; Gun Powder fires with chilli, cucumber and lemongrass. By day, the bar serves artisanal coffee; by night, the flapper-era atmosphere of the 1920s comes alive, accompanied by flavour-rich, local dishes.
