There aren’t many places in the world where you’ll find a Korean-Swedish cocktail bar, but multicultural Malmö is one of them. Sister to Jennie Walldén’s Namu Korean-Swedish restaurant, Gaji embraces a minimalist vibe that suits both cultural aesthetics: natural pine-blonde woods and straightforward grey banquettes, thin and crystal-clear glass tumblers and coupes, and not much else to complicate matters. This simplicity, of course, gives the space for flavour to shine, which it most certainly does. One tea-based cocktail, featuring rosa tequila, umeshu and walnut spirit, sherry and hibiscus, begins at -20C and warms up to 3C by the time you drink, unravelling fresh flavours with every sip. Most nights of the week it’s innovative cocktails to blow your mind, though on Wednesdays and Thursdays expect Korean-style fried chicken and beers – and fun – until late.
