Locality is now more than de rigeur in hospitality circles, but at this rural Swedish guesthouse, husband-and-wife team Nicolai and Eva Tram take the concept of ‘eating the land’ up a notch: dining here is an immersion in the surrounding birch woodlands. From the Hansel-and-Gretel-worthy old sawmill – now restored and transformed into a restaurant with rooms using meticulously sourced second-hand materials – to Nicolai's preference for cooking over open fire, there’s something of a modern fairytale about this terroir-driven dining experienceGuests are taken on a four-hour narrative journey through the Swedish wildness via the plate with ingredients plucked from the region’s rivers and lakes, foraged in the woods or sourced from local producers, with an emphasis on local game. For dessert, diners are invited to relocate to a campfire. Even sommelier Eva’s pairings have something of a wild side: Swedish wines sit alongside beverages made using locally collected fruits and berries. Overnight guests, staying in the beautifully dressed upstairs rooms, are offered a similarly locavore-focused morning meal, too (and don’t worry, it’s not three bowls of porridge).
