Everything runs like clockwork at La Table, with the quietly ambitious, double Michelin-starred Franck Pelux in the kitchen. Set within the five-star Lausanne Palace, it caters to a discerning crowd, with eagle-eyed service, top-flight wines and a calm, light-filled dining room, whose windows frame vistas of Lac Léman. So far, so classic – but there are surprises too, on a menu that reflects Pelux’s time in Asia, and subverts the classical French canon in considerable style. Dishes might include exquisite crab gyozas, inspired by street-food snacks in Hong Kong; meticulously-crafted pressed sushi (oshibako) with Mediterranean red tuna; or yakitori-style sweetbreads with Provençal asparagus. Desserts often circle back to France, and childhood memories: if the chocolate soufflé’s on the menu, it’s always an excellent choice.
