PIC au Beau-Rivage Palace
Lausanne, Switzerland
The eponymous Anne-Sophie Pic (World’s Best Female Chef in 2011) transplants all the magic of her family’s Valence restaurant, Maison Pic, to Lausanne. The Beau-Rivage Palace setting – overlooking the serene waters of Lake Geneva – oozes fresh beauty following a renovation by superstar interior designer and architect Tristan Auer. Pic debuts four menus that reflect the region’s landscapes, dishing up Fera fish (indigenous to Lake Geneva), her trademark Berlingots ravioli, roasted Arctic char and pork cutlet, offset with a fermented ginger and cabbage blend, among other outstanding creations. The whole operation is ably supported by head sommelier Paz Levinson who presides over one of Europe’s largest wine cellars, which stocks some 75,000 bottles.
