From the journey along the winding mountain road that leads to the village of Guchabo'an to the wildflowers that garnish the colourful plates, a meal here is a lesson in rural Taiwanese culture. Akame – meaning ‘grill’ in the language of the Rukai people – is a love letter to the country's tribes and their deep bond with nature. Chef Alex Peng (a descendent of the Rukai) was born in the village and his affinity with local ingredients is unmistakable in punchy plates made from ingredients largely sourced from the surrounding forests and farms. Although most of the cooking is done over a traditional wood fire, clean, contemporary presentation speaks to Peng’s training under celebrated chef André Chiang who has restaurants throughout Asia.
