Rustic wooden benches, white tablecloths and very little decoration set the scene for one of Taiwan’s most sophisticated restaurants, where modern Singaporean cuisine is presented like art. Jimmy Lim Tyan Yaw – formerly of Le Moût in Taichung, The French Laundry in California and Copenhagen’s Noma – draws on personal memories but expresses them through Taiwanese ingredients. Around 90% of his tasting menus are put together from locally sourced produce every day. Kaya roti is reimagined as kaya ice cream, served in an egg shell in a basket of eggs, and fermented banana curry is served on top of a succulent tiger prawn.
