HiBoRu is an enchanting, eclectic place to while away an evening. The decor has a retro Japanese feel, with a backbar that combines midcentury panelling juxtaposed with industrial-style stainless steel fridges and an illuminated canopy above, putting s spotlight on the bar team as they shake their thing. The bar has developed a solid following for its renditions of Taiwanese street food classics, but as ever we're here for the drinks. There's a section of the menu dedicated to refreshing Japanese-style highballs like the Hillside Tea Shop which mixes gin, grapefruit and Jasmine tea, plus there's a choice of classic cocktails such as the White Lady and the Penicillin. Signature cocktails are a highlight however, with drinks including the Snow Lily: a blend of whisky, fino sherry, sage and mint.
