Mume (meaning ‘plum blossom’, Taiwan’s national flower) is a study in glass and polished marble. Hong Kong-born Richie Lin – formerly of Sydney’s nature-inspired Quay and Copenhagen’s world-famous Noma – pays homage to his adopted country with fresh, flavourful dishes that explore lesser-known Taiwanese ingredients such as goose barnacles prepared with modern European techniques.
