André Chiang – who won Asia’s 50 Best Lifetime Achievement Award in 2018, just a couple of weeks after shuttering his acclaimed Restaurant André in Singapore – opened Raw in his native Taiwan in 2014 with the goal of spotlighting local ingredients. The dining room is marked by a striking, undulating wooden sculpture made from blocks of native pine. The ever-changing menu by chef de cuisine Alain Huang is based on a few simple ingredients, carefully selected according to the island’s 24 ‘micro-seasons’. Beverage pairings include French biodynamic wines, fine Taiwanese tea and hand-brewed coffee from local roasters.
