The drinks and food at this visionary Taipei venue are nothing short of works of art. Guests sit at a rectangular counter that faces the staff as they prepare cocktails and accompanying plates, such as a combination of gin, yuzu wine, jasmine, shaoxing wine and amontillado sherry, alongside tofu panna cotta with miso syrup and a crumbled egg yolk. Located behind a hidden door, UnDer Lab is intimate and mysterious, with little lighting save for a spotlight for each place setting. This hidden bar can be booked for an à la carte evening, but for the full experience, there’s a seasonally-changing set menu. Guests are taken on a journey that features a series of wines, cocktails and dishes, all experimental and beautifully presented.
