A Molteni stove encased in Carrara marble (famously Michelangelo’s favourite) sits in the middle of this luxurious dining room, hovering over the city from the 61st floor of State Tower. With just 16 seats surrounding the dramatic open kitchen, each guest is witness to the theatre of precision-led cooking. Brilliant chef Vincent Thierry’s (previously of Hong Kong’s renowned Caprice) modern French tasting menus demonstrate the fact that he considers himself a chef before artist, although bold graphic plating might tempt you to disagree. Ingredients that cannot be found locally are the best in the world – French caviar, Sottish langoustine – while as much as possible is made on site, including fist-sized pats of butter delivered to the table by Thierry himself, a pleasing gesture of Gallic hospitality.
