Self-taught Thai-American chef Dylan Eitharong moved to Bangkok in 2019, setting up his supper club-style restaurant Haawm (a riff on the Thai for ‘smells good’) not long after, on the ground floor of his aunt’s townhouse. There’s never a dull moment here: decor is vintage market finds, neon signs and bright floral tablecloths and the playlist is fun. The cooking is just as thrilling. The set menu, divided into sections ‘to start’, ‘snacks’, ‘with rice’ and ‘sweets’, is served family-style at two different sittings and changes often, with inventive dishes celebrating the city as a mix of cultures. It could be fried green bananas filled with spicy minced duck; or prawn schnitzel with a rose apple salad. Mains might see you feasting on duck eggs braised in five spice with roast red pork and candied mustard. Or crispy soft-shell crab marinated in turmeric, chillies and coconut cream. Book well in advance – the space is small and the waitlist is substantial.
