Established in 1958, Le Normandie at the Mandarin Oriental has become the destination for quintessential French fine dining in Bangkok. Chef Arnaud Dunand-Sauthier sources ingredients from France – as well as native produce through the Royal Projects programme – and crafts dishes with clean, precise flavours. His Krystal caviar with sea urchin and light potato foam is a particular highlight. The dining room, which overlooks the Chao Phraya River, cultivates an air of old-world elegance, with jackets (provided upon request) compulsory attire for gentlemen at dinner.
