Blink and you’ll miss Samrub Samrub Thai: the restaurant is hidden behind a garage in the higgledy-piggledy backstreets of Bangkok’s Charoen Krung neighbourhood. After navigating your way to the dining room, diners are met by Thanyaporn “Mint” Jarukittikun, front-of-house extraordinaire and one half of the husband-and-wife team that heads up the restaurant. Her husband Prin Polsuk will be at the pass, preparing an incredible tasting menu that features hyper-seasonal, southern Thai favourites. The menus are transient, changing to accommodate the available local ingredients, and reflect the culinary traditions of different peoples across the nation. At any one time, diners can expect dishes inspired by the Srivaijaya Kingdom, Urak Lawoi people, or fishing villages in the Satun region. Although a few favourites remain: look out for the crowd favourite Regency Kapow, an aromatic basil, garlic and chilli stir fry splashed with pineapple brandy.
